Quick Update on Busy Semester and NY Resolutions

Yay!  Since the LT and I moved this past year, neither of us have been for a doctor’s check up.  We just haven’t needed to, which I attribute to how we eat.  But technically for school, I’m supposed to have received a flu shot so I finally scheduled an appointment.  I got out of it this year (they aren’t giving them anymore!), but I know next year, I’ll be out working with the public in the healthcare field…so I’ll probably be forced to get one, unless someone can suggest a way for me to avoid putting that stuff in my body.

Anyway, everyone knows going to the doctor involves getting weighed, something I was dreading.  But it turns out, sticking to my workout resolution is working:  I’ve lost 5 pounds!

I don’t think it’s only been the workouts; I think it’s been some of the raw deliciousness I’ve been enjoying.

Strawberry-Chocolate Ice Cream: 2 frozen banana, 1T cacao, 1 – 2T agave, 4 large frozen strawberries. Blend in the food processor until smooth and creamy…and delicious!

Mmmm…just seeing those kale chips makes me want to make a batch tomorrow.  In fact, I think I will!

Thanks to these babies, I’ve been able to get back on track with my food while keeping up my workouts despite the intensity of this semester.  It’s my last before I start clinical rotations so I’m trying to enjoy the madness of school because at least it’s not work 🙂


Still Goin’ (Fairly) Strong

Here it is the 15th of January and I have been somewhat stickin’ to my resolutions.  Last week I went to the gym twice and took Bishop, our poodle, on 3 long walks.  I’ve been keeping up with my morning smoothies and eating salads for lunch and then a vegan dinner.  Here are some pictures!

Tomorrow morning I’m meeting some of my girlfriends for a 6:30am spinning class.  I’ve never been spinning before so despite the early hour, I’m kind of excited about it!  Maybe I’ll even get some snaps…though I’m not sure I want to post my own photo online from an early morning workout session.

Yay! I Did It…Kind Of

So Lovlies, I did say that I would work out in the morning after taking the poodle on a walk with the LT.  What happened was a similar version to what I wanted: I ended up waking up a little on the later side, but it did go over to the gym myself and lift/would out a bit myself.  Then I came home and took the poodle on a big old walk just the two of us…while I listened to the NPR “Wait! Wait! Don’t Tell Me” podcast.

So even though it wasn’t just as I planned, I did it…kind of! And then I made a vegan carrot cake complete with vegan cream cheeze icing.  Pictures to follow tomorrow…after the LT and I take Bishop to the dog park…with more pictures of that…

My Return?

Been gone from you for a long time, Lovlies!  Sorry ’bout that…though I’m sure it will happen again, since this blog is not my full-time job, Organic Chemistry is.

Hello, Foodies!  Hope your day is going well!

I may spend most of the LT’s paycheck at Whole Foods, but at least forgetting my re-usable bags made me a bit smarter about my new city, Denver.

Isn’t this clever?!  I like how the bags show what produce is in season in the “Rocky Mountain Region”.

Just a fun little observation.  Now off to study for Microbiology.  An aspiring R.D. has gotta learn the basics first!

Oh-hi, O’Raw

For those of you with a normal sense of pun usage, let me explain the title of this post:  I’m in Ohio.  I’m eating raw.  Hence: Oh-hi, O’Raw…I know, ingenious, right?

The reason that I’m in Ohio is to visit my family.

The reason the LT and I are visiting family is to say good-bye for awhile.

The reason we’re saying good-bye is:  WE’RE MOVING FROM CHICAGO TO DENVER!!!  

Denver, Colorado!

The pool is heated year-round for those warm Denver Januarys! (wink, wink)

The LT got a position in Denver and starts in early September.  However, I’ll be heading out early because school for me begins at the end of August.  Only got two semesters left of pre-req’s!

We went out to the mile-high city a few weeks ago looking for a place.  Found an awesome one in a gated community with a gym, heated pool, hot tub, and backing up to one of the local state parks.

I foresee lots of biking and running in our future!  We loved the city the five days we scooted around town.  And have you ever met anyone who claims not to like Denver?  The two of us are so excited!

So the lack of posting has been due to final exams, picking up some extra summer work and A LOT of planning/wrapping things up.  Sorry!

Now you understand, though!

More raw foods coming up in the future…the near future…promise.

Peer Pressure Post

This past weekend was my birthday weekend…which I (of course!) spent with my sisters. Somewhere amidst all the tomfoolery, Shannon complained that every time she goes to my blog now, it’s the same post about her birthday…FROM BACK IN APRIL!

I have thus been peer pressured into posting. (Say that 6x fast)

So yes, I have been slacking, but only because big things are going on around here which I’ll divulge tomorrow…or the next day…or maybe next month at the rate I’m going.
