My Resolutions

It must’ve been something about 2012, but I was definitely NOT into blogging last year.  Maybe it was the moving from Chicago to Denver to Ohio.  Or maybe it was the fact that I finally got into grad school and it was HARD.  Maybe it was my time-consuming addiction to TNT reruns like The Mentalist, Bones, and Castle.  Whatever it was, I was DEFINITELY NOT into blogging.

But, if the date of this post is any clue, one of my new year’s resolutions is to get back in the saddle again!   And I’m starting tonight.  So let’s see…what’s been going on recently?  The holidays were not the best time for me in terms of sticking to my diet.  In fact, the LT and I have been complaining to each other for the past week or so.  It goes something like this:

Me: Uuugh!

LT: What is it, babe?

Me: I feel like a wildebeest.  I’ve been eating so awfully.  I’m all bloat-y and don’t even want to look at my skinny jeans.

LT: Well, the last time I worked out was 2 months ago.  I think I’m gonna return those Christmas jeans you got me for the husky-size.  I can’t even remember when we last had salads for dinner.  Speaking of…can we have vegan corn dogs with some of that awesome Sweet Baby Ray’s Honey Mustard tonight?

Me: Mmmmmm.  Great idea.

So you can tell that our hearts are in the right place, but we just haven’t been motivated.  We need a meal- and workout-plan makeover/motivator sesh.  My master plan is to blog about some of our progress here and that will help keep me accountable.  And if I’m doing it; he’ll do it, too.

So for tomorrow, the plan is get a brisk walk in, in the morning with the LT.  And then maybe a little bit of lifting in the gym.  I don’t want to psych myself out by going too hard too fast.

So here are some of my resolutions:

  1. Workout more
  2. Eat more raw foods
  3. Start fencing lessons (yes, I want to learn to handle an epee!)
  4. Dress up at least once a week
  5. Learn to sew (I got a sewing machine from the LT for my birthday this past year)
  6. Go to bed earlier (like before 11pm!)

I’m getting started on the workout tomorrow and the bedtime piece now.  Toodles…but till later, below are some pics of some of the raw munchies we actually DID manage to sneak in over the holidays.

Pure Glow *16’s Cookies and Cream Dough Bites

Hi, Boos!

You may be a little angry with me after this post. I told you I was making Mariel’s Cookies and Cream Dough Bites. I also told you I’d let you know what I thought about them.

Well I made them. And to prove it here’s the pictures of the dough in the food processor.  

It consists of cocao powder, vanilla, coconut nectar, brazil nuts, dates, and buckwheat. Recipe here.

Denver’s First Hike…and Choosing Raw’s Recipes

Hello, Dolls!

The LT and I have been hard at work unpacking here in Denver.  But we did take a break last weekend to go hiking!  Yes, us City Folk went on a 4-mile hike at Castle Rock state park.

I’ve also been catching up on Gena’s blog, Choosing Raw.  She has such insightful, inspirational, and FUN posts.  Check her out.

I’ve made two of her recipes this week: Raw Zucchini Hummus and Broccoli and Cauliflower Salad.

Both were intended as little treats to snack on throughout the week.

Hummus

I made it around 9pm and the lighting in the new kitchen is obvi not meant for great picture taking.  I added some extra zucchini and lemon juice because I prefer a lighter tasting hummus (less tahini-ish).  It has a great flavor; slightly lumpy, similar to a baba ganoush. Perfect for dipping my veggies in and luring me away from the LT’s chips in the cupboard. Gena’s recipe here

Broccoli and Cauliflower Salad

My intent was to make this for snacking throughout the week, too.  However, it’s just so DANG good, I cannot stop snacking!

It’s an easy recipe combining broccoli, cauliflower, red peppers, and raisins…but the kicker is Gena’s Creamy Asian Dressing.  That stuff could be spread on a roof shingle and I would seriously considering eating it, shingle and all!

I cannot encourage you enough to create this recipe for yourself because it’s inexpensive to make and it is A. MAZE. ING.  Gena’s recipe here

Mean, Green Dressing in a Pinch

This week I didn’t have a lot of room to be creative in the kitchenette of the hotel I’ve been staying at in Denver. Like a smart raw foodie, though, I did bring my Vita-Mix in the car with me.

I can live without the dehydrator, juicer, and food processor for a few weeks, but my VM? Heaven forbid!

One night, I ran out of Annie’s Green Goddess dressing which is what I always use in a pinch. So I looked around and just started throwing things into the VM.

The result was way more delicious than I had anticipated! And it made a ton.  Lasted me through about 4 days (or 8 salad beasts).

Mean, Green Dressing

1 ripe avocado

1.5 t unpasteurized white miso

2 T Braggs Aminos

2 T white sesame seeds

2-3 T agave

1/2 colored bell pepper (I used orange)

Water (I used approx. 1 cup)

  1. Put all ingredients except water into high speed blender.
  2. Add a dash of water–enough to get things wet and started in the blending process.
  3. Blend on medium while adding water to desired thickness.

First Week in Denver

Well, I’ve been in Denver for a week now.  Unfortunately (or should I say fortunately?!), the LT has been in Chicago coordinating and carrying out our move.  I’ve moved as an adult seven times…this will be my eighth since the age of 22, but the LT has never done it before so I’m a little nervous.  But, knock on wood, what’s the worst that could happen?

Anyhow, I’ve been staying in one of those extended stay hotels with a mini-fridge and kitchen so I’ve been able to keep food costs down.  Below are many of my eats: (gold star to anyone who guesses the pattern🙂

In the meantime, I haven’t totally been chowing down, filling the void of the missing LT with salad.  I’ve gone out walking/running/hiking!

Fresh Eats

With the big move to Denver coming up, I’ve been trying not to buy too much at the grocery store. Key word: TRYING.

We still have loads in the fridge that should be eaten by tonight when we leave for vacation…not gonna happen! There’s just too much so I am most likely going to pack a cooler to bring as much as I can before it goes bad.

Hello, Lovlies!  How was your Easter weekend?  And how is your week going?

FANTASTIC is my answer to question 1.  And FANTASTIQUE is my answer to question 2!

Let me start at the beginning.  The LT and I drove to Ohio with Maureen for Easter weekend.  (Wolfpack, UP!)  Good Friday also had the dubious honor of being our youngest sister’s 18th birthday!

Well, after the egg hunt and Easter Dinner, the three of us made the trek back to Chicago.  On Monday, after my Chem class, we had some time to kill before Maureen had to catch her train back to Marquette, so we hit up the French Market.  It’s an old train station that has been re-done to house a bunch of gourmet food booths, flower stalls, and organic groceries.  Yum!

Maureen and I hit up Raw. which is one of Chicagoland’s raw food restaurants.

There were so many options to choose from!

We both chose the raw falafel sandwich.

At first I thought the meal was a little sparse, but it turned out I only ate about half in the first sitting.  The falafels were d-lish smothered in some hummus and topped with fresh shredded carrots.  The onion bread was nearly as yummy: it’s flavor was yummy, however, I did keep getting nut pits stuck in my teeth.  But this small inconvenience was not enough to deter me from ordering it again.Plus the sides were just as lovely as the sammie!

And let’s not forget the LT!  In honor of our family’s time in Germany, he ordered us up some German style pomme frites!
