Still Getting Stronger…But Eating Weaker

Funny!  I never made it to the spin class a few weeks ago.  I picked up my girlfriend and drove to the gym and then realized she’d forgotten her ID!  BUT…I did come home and hit up our little apartment complex’s gym.  And I’ve been going pretty strong since!  I’m proud to report I’ve been going to the gym 3 times a week since.  Yay!  Tomorrow (if I make it!) will be my first week of hitting the gym up 4 times in one week.

In food news, I’ve been lazy and haven’t uploaded any photos of my eats.  And to be honest, the working out combined with my courseload this semester, has really screwed up my good intentions.  I’ve been eating vegan, but a lot of cooked food.  I am feeling ok with this, but a little guilty and a little bloaty…

…well, maybe a lot bloaty.  I know I need to get back on the bandwagon here soon and I will.  But right now I want to focus on what I’m doing well, and that’s making it to the gym and getting good grades.  Oh and posting here, if not regularly, fairly often!

My Resolutions

It must’ve been something about 2012, but I was definitely NOT into blogging last year.  Maybe it was the moving from Chicago to Denver to Ohio.  Or maybe it was the fact that I finally got into grad school and it was HARD.  Maybe it was my time-consuming addiction to TNT reruns like The Mentalist, Bones, and Castle.  Whatever it was, I was DEFINITELY NOT into blogging.

But, if the date of this post is any clue, one of my new year’s resolutions is to get back in the saddle again!   And I’m starting tonight.  So let’s see…what’s been going on recently?  The holidays were not the best time for me in terms of sticking to my diet.  In fact, the LT and I have been complaining to each other for the past week or so.  It goes something like this:

Me: Uuugh!

LT: What is it, babe?

Me: I feel like a wildebeest.  I’ve been eating so awfully.  I’m all bloat-y and don’t even want to look at my skinny jeans.

LT: Well, the last time I worked out was 2 months ago.  I think I’m gonna return those Christmas jeans you got me for the husky-size.  I can’t even remember when we last had salads for dinner.  Speaking of…can we have vegan corn dogs with some of that awesome Sweet Baby Ray’s Honey Mustard tonight?

Me: Mmmmmm.  Great idea.

So you can tell that our hearts are in the right place, but we just haven’t been motivated.  We need a meal- and workout-plan makeover/motivator sesh.  My master plan is to blog about some of our progress here and that will help keep me accountable.  And if I’m doing it; he’ll do it, too.

So for tomorrow, the plan is get a brisk walk in, in the morning with the LT.  And then maybe a little bit of lifting in the gym.  I don’t want to psych myself out by going too hard too fast.

So here are some of my resolutions:

  1. Workout more
  2. Eat more raw foods
  3. Start fencing lessons (yes, I want to learn to handle an epee!)
  4. Dress up at least once a week
  5. Learn to sew (I got a sewing machine from the LT for my birthday this past year)
  6. Go to bed earlier (like before 11pm!)

I’m getting started on the workout tomorrow and the bedtime piece now.  Toodles…but till later, below are some pics of some of the raw munchies we actually DID manage to sneak in over the holidays.

Meatless Meatballs

So I’ve started back to school full time to get my degree in nutrition and I seem to have a weird combination of too much/not enough time on my hands.  I haven’t been eating healthy at all, which I blame on not enough time.  However with the blizzard this week, I feel like I’ve had too much time; I just lounge around grazing on crap.  Blech!  Time to get back on track…(if I had a nickel for every time I thought or wrote that phrase!)

I began by being inspired by Tonya Zavasta’s Meatless Meatballs.  Her book, Beautiful on Raw, is an inspiring and motivating collection of raw transformations followed by a ton of recipes.  One of my favorite things about this book is that each recipe focuses on a different ingredient and then gives you some information about the health benefits of that particular ingredient.  I’ve never seen another raw book like it.  Click here to learn more or place an order.

My recipe is a slight variation of hers since I couldn’t find psyllium husk at WFM and I just plain didn’t have any sweet onion in the fridge.

Meagan’s Mock “Meatballs”

Right before going into the dehydrator for 6 hours!

1/2 c. flax seed, ground

2 strips of kelp, soaked for 10 mins

1/2 c. sun-dried tomatoes, soaked for 1 hour

1/2 c. walnuts

1/2 bell pepper, cut into small pieces

2 stalks celery, chopped

1/2 c.  ground pumpkin seeds

1/2 c. fresh chopped parsley

sea salt to taste

  1. Grind pumpkin seeds in a dry Vita Mix and pour into bowl.  Set aside.
  2. Grind flax seed in a coffee grinder or dry Vita Mix.
  3. Add kelp and sun-dried tomatoes to ground flax.  Blend well
  4. Add walnuts, bell pepper, and celery.  Puree and transfer to a bowl.
  5. Stir in ground pumpkin seeds, parsley, and salt.
  6. Mix well by hand and for into ball using a small ice cream or cookie dough scoop.
  7. Place “meatballs” on mesh dehydrator sheets and dehydrate at 105F for 6-8 hours.

Morning After Juice

So it was the morning after the over-indulgence of Thanksgiving and while there was no turkey involved for me, there was definitely some over-eating. Blerg!

That’s why I made some carrot-orange-cucumber juice. Some will say it spikes the blood sugar level too high, but if given the choice of this juice or it’s pasteurized cousin, Minute Maid orange juice, I’ll take this every time! Yum!

The Honeymoon is Over

Aruba, Jamaica, Ohh I Wanna Take Ya!

So the LT and I are back from our honeymoon in Aruba where we drank entirely too much vodka and beer. Well not really too much–it was great! Just too much in terms of nutrition since we weren’t mixing the vodka with raw, unpasteurized cranberry juice!

After all the “hard work” leading up to the wedding where I eliminated soda, alcohol, salt, and most bread, after the wedding there was not a processed food or type of drink on the entire island that I didn’t like. So now my skin and energy levels are really paying for the 10 days of indulgence.

That means it’s time to get my head back in the game, make some super-healthy, satisfying meals, and get my butt back on an elliptical, treadmill, or sitting in spin class. However to do this, I need to be held accountable, otherwise, pass me another bartender!  Between wedding, work, and school, fitness and food seem to come in last.  I was noticing that the LT has gained a little weight in the past year (he’s still hot!) and I am guessing that is due to my hard-partying influences. Accountability solved: my accountability will be to the LT.

I can’t let my new husband get fat and unhealthy, right ladies?!

So yesterday I made a trip to the store and bought up some ingredients for healthy dishes. Tonight’s first healthy meal is below, Big Old Salads with mustard vinaigrette. Mmmmm. It’s even mostly raw, but the LT needs his croutons. (Mine are Herb Crackers from Mary’s Gone Crackers as recommended by the authors of Skinny Bitch-.)  UPDATE: I got so busy with math homework and studying, that the LT actually made the salads which do contain some sauteed mushrooms in EVOO and noma shoyu…and he got home from work and went on a run himself!  Yay!

The honeymoon is over and it’s time to jump back on the bandwagon.  And though I’m sad to leave the beach, I’ll be happy to get my figure back!
